I forgot to add. Some aunties used fresh coconut as a homogenizing agent in the cilantro chutney, some used split, roasted chana dal and some used peanuts, which, IMO, gave the best results.
Awesome ,Took me back to my college days where this sandwich was a staple. Today too in Mumbai this is a regular lunch for many students and corporate employees. Thank you
Thank you so much Sheryl! I hope you go to Mumbai one day and try the Bombay Sandwich on the streets of this crazy busy city. In the meantime you have this recipe :)
A childhood favourite. Love the recipe, especially the addition of peanuts to the green chutney - genius!
Thank you Ankita. Peanuts do take the chutney to another level. I have to thank my Gujarati aunties for that tip.

Have to try this soon! I’ve used soaked cashews which worked well for me, but I suspect peanuts give a nuttier flavour.
Yes, they do provide a nutty flavor which manages to subdue the cilantro’s grassiness
Great recipe! So colorful! Love your newsletter!
Thank you, Susan! Much appreciated.

Love your writing style :). One suggestion: is it possible to have a button that says "jump to recipe" or "get recipe" and it pops up ready to print?
Did you see I added the "Jump to Recipe" button in the Chai post?
Yes! Thank you for adding the button. It helps immensely when printing the recipes !!
Thank you MC! I’ve been thinking abt this myself! Let me figure it out! Stay tuned
You reminded me of my office days in Mumbai too!
